Peanut Butter Cookies: My Mum's Recipe

It's not that long ago since I wrote about how much I love home. I have a wonderful relationship with my mum and my love of food very much stems from her. Ready meals were extremely rare, takeaways few and far between, and the importance of home cooking was very strong. My mum's baking remains legendary amongst my friends (AJ forever craves her apple pie, Phoebe misses her banana cake all the way from Australia!), and I like looking through the recipe book she made for me when I moved to university for inspiration on what to bake next.


I hate peanut butter, so it's a testament to this recipe that I love these cookies. They're probably more biscuits to be honest, but peanut butter seems so American that 'cookies' just fits better. I'm not so good with the presentation bit, but believe me, these taste so good.

Ingredients


175g butter
50g peanut butter
100g caster sugar
100g soft brown sugar
1 egg
225g plain flour
1/4 tsp salt

Method


1) Mix the butters, sugars and egg together
2) Fold in flour and salt to make a firm dough (add more flour if necessary)

3) Make into equal sized balls and place on a greased baking tray
4) Flatten the balls with a fork and try and keep them equally spaced so they don't turn into one giant super biscuit (unless that's what you fancy!)

5) Back in the oven at 190 degrees C for 10-12 minutes until golden brown

It is such an easy recipe and makes you look like a baking genius when someone pops over for a cuppa.

This post is part of the #WrenFamilyFavourites campaign which is a lovely way of reminding people of the importance of the kitchen in the family home. Eat together people, and switch off the god damn television.
